Apple Crumble Delight

Base: Whisk butter and sugar together.
Add vanilla essence and coconut and mix.
Lastly add cake flour, mix to form a soft dough.
Line a Pyrex dish (36 X25cm) with 4/5 dough, reserving 1/5 of dough in refrigerator for later use.
Sprinkle base with cinnamon and set aside.
Filling: Separate eggs and whip egg whites till stiff peaks form.
In another bowl; whisk yolks, condensed milk and lemon juice.
Add the pie apples. (Apples can be cut if desired)
Fold through the whipped egg white.
Gently pour apple mixture into Pyrex dish.
Grate reserved 1/5 dough over mixture.
Bake in pre- heated oven at 180 degrees for 35-40 minutes.
Allow cake to cool and sprinkle (sieve) with icing sugar.
